Dark maple syrup is harvested at the end of the season, when spring is almost over and the snow is almost completely melted. At this point, the sap is much darker. This adds a caramelized, almost burnt flavour to the syrup. Dark syrup is the strongest of all 3 syrups. It’s a favourite among people who love bold syrup with character. It’s also used most often in cooking and when preparing desserts.
Good for 3 years. Keeps in the refrigerator 6 to 12 months after opening.
